Potato Pancakes

Ingredients
  1. 2 cups grated potatoes
  2. 3 eggs
  3. 1 1/2 tablespoons flour
  4. 1 1/4 teaspoon salt
  5. 1 to 3 teaspoons grated onion
Instructions
  1. Potatoes with a dry texture work best. Place two cups coarsely grated potatoes in a bowl. Beat 3 eggs very well and then add to the potatoes. Combine the flour and salt. Sift the dry flour mixture into the potato and egg mixture. Add onion and mix well. Shape the mixture into 1/4 inch thick 3 inch diameter patties. Saute in 1/4 inch or more hot oil. Turn and brown second side until crisp. These are usually served hot with fresh applesauce.
Notes
  1. They are best served hot out of the pan. If you prefer to hold them and serve all at once, place them on a rack above a baking sheet in a 200 degree oven. Blot with a paper towel to absorb any excess grease before serving.
